1 c unbleached all purpose flour
2 tsp baking powder
2 tbsp brown sugar, packed
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 c skim milk
1/2 c canned pumpkin puree
1 tsp apple butter
2 egg whites, at room temperature

Directions:
Directions:
Sift flour, sugar, baking powder, nutmeg and ginger into a large bowl. Stir in milk, pumpkin and apple butter. In a separate bowl, beat egg whites with an electric mixer on high speed until stiff peaks form. Gently gold egg whites into pancake batter. Spoon 1/3 c batter for each pancake on a non-stick griddle or skillet. Turn pancakes when tips are covered with bubbles and edges are lightly browned. Cook on the second side for 2 minutes or until browned.
