3/4 c lukewarm water
1 tbsp yeast
1/4 c sugar
3/4 tsp salt
1/3 c powdered milk
1/4 c shortening, softened
2 eggs, beaten
3 c flour

Filling:

2 c sugar
1/2 c flour
1 tsp vanilla
3 c half and half
1-1/2 c milk
3 eggs, beaten
fruit of your choice ( canned, fresh or frozen)

Mix yeast and 1 tsp sugar with lukewarm water and set aside. Whisk together sugar, salt, powdered milk, shortening and eggs. When yeast is bubbly, add to mixture along with 1/2 c flour and whisk until smooth. Add flour gradually, just until dough can be handled, and knead 5 minutes. Cover and set aside to rise until double, approx. 1-1/2 to 2 hours.

Filling:

In a 2-1/2 qt. glass bowl, mix flour with sugar and whisk in remaining ingredients. Microwave for 3 minutes intervals, whisking each time, until mixture begins to thicken as for soft pudding. Set aside.

Punch down dough and divide into four pieces. Grease pans, and with fingers spread dough in bottom of pan and up the side about 1 in. Place fruit of choice in bottom of pan (cherries, peaches, apricots, plums, berries (canned, fresh or frozen) and spoon filling over fruit, spreading to edges. Bake (do not allow to rise) at 350º for 15 to 20 minutes, until crust is browned. Refrigerate when cooled. Freezes well.
