Tzatziki
1/2 cup plain Greek-style yogurt
1/2 tbsp. minced garlic
3 tbsp. grated cucumber
1 tbsp. olive oil
2 tsp. fresh lemon juice
1 tbsp. chopped fresh parsley
1 tsp. salt
1/2 tsp. fresh ground pepper

Lamb Burgers
1 lb of lean ground lamb
5 oz. ground pork fat (I do not use this)
2 tbsp. minced garlic
1 tbsp. fennel seeds, toasted and ground
2 tbsp. chopped fresh parsley
1 tbsp. salt
2 tsp. fresh ground pepper
1 tbsp. olive oil

Directions:

Combine all of the ingredients for the Tzatziki and mix together. Set aside in the refrigerator.

Combine ingredients for the burgers except for the oil. Heat a pan or indoor grill pan (or heat your outside grill) brush the surface with the oil. Cook the lamb burgers for 2 minutes on each side for medium. Serve on a bun with the Tzatziki sauce.

I have never used the pork fat and I think they taste just fine with out it. Ground lamb can be a little hard to find (at least in Columbia) but this is recipe is well worth it. Also, you might want to cook a little longer than 2 minutes per side. We always put these on the grill. This is an easy recipe to put together the night before.
