1 1/2 lb lean ground pork
1 small minced onion
1/2 c boiling water
1 chopped garlic clove
1 1/2 tsp salt
1/4 tsp each -mace-blackpepper- sage
3 medium potatoes
Pastry for 2-crust 9" pie
1 egg + 1T milk beaten together

Combine pork, onion, water and seasonings in saucepan. Cook over low heat, stirring constantly until 1/2 the liquid has evaporated. Cover and continuing cooking over low heat 45 minutes longer. Boil and mash potatoes, put in oblong dish to cool. When meat is done, mix with mashed potatoes and cool 30 minutes, stir occasionally. Line a 9" pie plate with one pastry and fill with meat mix and top with remaining crust. Seal the two crust edges with dabs of water droplets, flute edges and slash top crust. Brush top crust with egg white mix. Bake at 400ºF 10 minutes, reduce heat to 350ºF baking for 30-40 minutes.

My mother is from Quebec, Canada where she grew up eating this savory French Canadian meat pie. This holiday traditional family favorite is served with crisp green salad and melon. We enjoy it all year round!
