1 cup warm unseasoned mashed potatoes
½ teaspoon salt
2 teaspoons vanilla
2 lbs confectioners (powdered) sugar
Optional: 1 lb chocolate confection coating or dipping chocolate
2/3 cup peanuts, ground
1 cup coconut, shredded

Directions:

In a 4 quart bowl, mix salt, vanilla, and potatoes. Take one cup at a time of sifted powdered sugar and sprinkle over the potatoes. At first it will be liquid-like, then thicken as more sugar is added. When it becomes like stiff dough (some sugar may be left over), knead it. (If more sugar is needed, add it.) Cover the bowl with a cloth and refrigerate it. When a ball can be rolled from a spoonful of dough, shape pieces into ½ inch balls.
To make it a fancier candy, roll it in melted chocolate, then coconut or peanut pieces.
