2 lb. pork (leave a layer of fat on top and cut small crisscrosses in it.)
Fat/oil for cooking
Caraway, pepper, salt, garlic, and other spices as desired

Wash pork with cool water and pat dry. Rub spices into meat. Sear/brown out side of meat by frying quickly in oil. Continue cooking meat in oven. Pork roasts should be cooked between 325-350ºF…to internal temperature of 170ºF. Baste often with water or stock. Make sure meat is done. Cut fat on outside should be crisp and golden. Collect the liquid without the fat. Make a gravy with butter, flour, and water. Serve meat with gravy and dumplings.
