7 oz can petite cut tomatoes with jalapenos
1/2 medium red onion, finely minced
2 garlic cloves, crushed
1 lemon, juice of (may sub lime juice)
1/2 c cilantro leaf, chopped (optional)
1/2 tsp salt (to taste)
2 T sun-dried tomatoes, pureed
1 tsp apple cider vinegar (optional)

Directions:

Mix ingredients in a bowl. For best flavor, let sit 1 hour or more so flavors meld.
