1 1/2 pounds boned and skinned chicken breast halves ; brown with Pam
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 6 oz jar marinated artichoke hearts ; drained & reserved
2 cups sliced mushrooms
1 cup chopped onions
2 ribs chopped celery
1 large carrot ; chopped
1/2 red bell pepper ; chopped
1 tablespoon minced garlic
1 28 oz can diced tomatoes ; undrained
1 8 oz can tomatoes sauce
1 1/2 tablespoons dried basil
1 tablespoon dried oregano
3/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1/8 teaspoon crushed red pepper
3 medium bay leaf
1/2 cup freshly grated Parmesan cheese

Pam the pan, season chicken with S & P, brown. Remove Add reserved artichoke marinade to skillet; heat until hot, stirring to scrape up browned bits from bottom of skillet. Add mushrooms, onions, celery, carrot, bell pepper and garlic; cook 5 minutes or until vegetables begin to soften.Add all remaining ingredients except cheese; mix well. Partially cover; simmer 10 minutes. Add chicken cook until done. Sprinkle with cheese and serve.
