4 c. flour 1 c. water
2 eggs Pinch of salt

Filling:
12 oz. dry cottage cheese
1 egg
pinch of salt

Bread Crumbs:
1 1/2 T. shortening
3-4 slices of bread, cubed

Directions:
Combine cottage cheese, egg and salt, set aside. Combine flour, water eggs and salt (for dough). Roll out on a floured surface about 1/8 to 1/4 " thick. Cut into 4" square Stretch dough a little on all four sides. Place a tablespoon of cottage cheese mixture in each square. Pinch end with flour to seal (make sure they are sealed). Bring a large kettle of water to a boil and add Kase Knip. Simmer about 20 minutes or until they come to the top. Drain reserving water, place in a bowl. In a fry pan put shortening and bread cubes, brown. Pour over Kase Knip in bowl ready to serve.

How to eat: You can fry the Kase Knip after boiled till golden brown. You can put Kase Knip in a bowl add some reserved water and 1/4 cup cream and eat like soup. With the left overs you can cut up the Kase Knip; fry and scramble eggs with it.
