1 1/2 cups boiling water
1 lb. chopped and pitted dates
1 1/2 cups sugar
2 large eggs
1 tbsp. vegetable oil
1 tsp. vanilla
1/4 tsp. baking powder
1/2 tsp. salt
2 tsp. baking soda
2 1/4 cups sifted flour
1 cup chopped nuts
4 small disposable, aluminum loaf tins
Pam no-stick spray

Directions:
Directions:
1) Pour boiling water over the chopped dates and let stand until softened
2) Cream together sugar and eggs then add oil and vanilla and mix into date mixture
3) Sift and add dry ingredients to the mixture
4) Add nuts and mix by hand
5) Pout batter into 4 or 5 (1 lb.) small greased tins
6) Bake at 350º until browned and slightly cracked on the top (approx. 25-30 minutes)
