1 1/2 lbs boneless loin pork cut into 1/2 inch cubes
3 tbsp. flour
1 1/2 tsp. chili powder
1/4 tsp. cayenne pepper
salt and pepper to taste
3 tbsp. vegetable oil
1 tsp. brown sugar
1 lg. clove garlic
1/2 cup olives sliced
1 28 oz. canned tomatoes
3 medium onions to sliced
1 tsp. Dijon style mustard
1/4 tsp. dried thyme
1/4 cup liquid from olives
6 drops of hot pepper sauce (or to taste)

Directions:
In frying pan saute onions and garlic in 1 tbsp. of oil. Transfer to 2 qt casserole dish.
Combine flour, chili powder, cayenne, salt & pepper in a heavy plastic bag. Add pork and shake to coat meat evenly with flour.
Add remaining oil to frying pan and brown meat on med-high heat. Reserve flour in plastic bag. Add meat to top of onions in casserole dish.
To the frying pan add tomatoes, breaking into small pieces with spoon. Stir in brown sugar, mustard and thyme. cook a few minutes, stirring to gather up brown bits from bottom of fry pan. Blend reserved flour with liquid from olives and hot pepper sauce and add to frying pan. bring to boil, stirring constantly until thickened and smooth. Add olives. Pour over meat and cover with casserole lid
Bake at 350ºF for 25-30 minutes. Serve with rice and vegetables.
