Hot Italian Sausage Sub

INGREDIENTS:

4 tbsp extra virgin-olive oil
1 medium red onion, cut into inch dice
2 red bell peppers, cut into inch dice
2 yellow bell peppers, cut into inch dice
1 tsp red chili flakes
1 tsp dried thyme
2 tbsp tomato paste
1 cup dry red wine
1 lb. fresh hot Italian sausages
1 baguette
1 cup freshly grated Parmigiano-Reggiano
grated mozzarella

Preparation:
In a saute pan, saute onion, peppers, chili flakes and thyme in olive oil over medium heat. Saute and continue to stir until ingredients are soft. Add tomato paste and wine and bring to a boil. Turn heat down to a simmer and add sausages. Cook until sausages are done (about 10 minutes on each side).

About an hour before serving, preheat oven to 350 F. and cut the baguette open (like a hot dog bun) and cut into 3-inch pieces. Open each 3-inch baguette, add one sausage and 2 tbsp of pepper mixture. Sprinkle with 1 tbsp Parmigiano and 2 tbsp mozzarella. Wrap each sandwich loosely in foil. Place sandwiches in oven for about 40-minutes until they are heated through.

Made these for superbowl a few times. You can tweak the sautee or seasoning pretty much any way you like and they would still be good. I think the spicier the sausage, the better.
