Olive Oil
Red Wine Vinegar
Dijon Mustard

Artichoke hearts
Pitted black olives
Red onion
Gorgonzola or Blue Cheese
Pasta of choice

Directions:
Directions:
Dressing: Mix 1 part olive oil with 2 parts red wine vinegar. Add dijon mustard to taste. Use a whisk and beat well.

Drain artichoke hearts and cut into medium size pieces. Slice olives in half. Cut onions into pieces (not chopped). Put into a bowl with cook pasta and add crumbled gorgonzola or blue cheese. Mix well and refrigerate.

Pasta seems to soak up dressing, so you may need to add more before serving. Tripp makes the dressing by taste, so measurements tend to go by the wayside when he makes it!
This is great as a side dish and other veggies of your choice could be added too.
