1 c. rice
2 T butter
5 c. water
1 c. sugar
1/4 t. cardamom (optional)
1 t lemon juice
1/8 t. saffron
2 T hot water
cinnamon to taste
silvered almonds (optional)

Directions:
Directions:
1. Bring rice, butter and salt to a boil in water; cover and simmer gently until rice is soft and swollen, stirring occasionally to prevent sticking, about 45 minutes.
2. Add sugar and lemon juice to rice mixture and mash with potato masher. (add cardamom)
3. Dissolve saffron in hot water, add to rice mixture and mix well.
4. Pour pudding in large serving bowl. Decorate top with cinnamon and almonds.
