Persian Baklava Recipe

1 lb. fillo pastry
1 lb. melted butter (unsalted)
3.5 c. almonds, chopped
1 t. cardamom
1/2 c. sugar
2 c. sugar dissolved in 3/4 c. hot water
1 t. rosewater extract
.5 c pistachio nuts, chopped

Directions:
Directions:
1. Place 3 or 4 sheets of baklava pastry evenly over the bottom of a well-greased oblong cake pan, brushing each sheet on both sides with melted butter before placing the other sheet on top.
2. Thoroughly mix together almonds, cardamom, and sugar and spread evenly over pastry sheets.
3. Place 3-4 buttered sheets of baklava pastry on top of the nut and sugar mixture.
4. Cut into square or diamond-shaped pieces (2x2)
5. Preheat oven to 350. Bake 25-30 minutes, then increase temperature to 450 and bake an additional 10-15 minutes, or until top crust is golden brown.
6. Mix rose water in sugar syrup and allow it to cool.
7. Remove the baking dish from the oven and pour syrup evenly over the top of the baklava.
8. Sprinkle with pistachio nuts. Allow to cool.
9. Before serving, run a knife along the grooves where the baklava had previously been cut. Keep refrigerated until serving time.

**1.5 c honey may be substituted for 2 c sugar.
