6 med. baking potatoes
½ c. margarine – softened
8 oz. cheddar cheese – shredded
1 tsp. parsley
1 (8 oz.) container sour cream
¼ c. milk
½ tsp. salt
¼ tsp. pepper

Directions:
Directions:
Wash potatoes, dry, and rub with oil. Bake at 400º for about 1 hour or until done. Cut in half lengthwise. Carefully scoop out the pulp, leaving shells intact. Mash pulp, stir in butter, 1 ½ c. cheese, sour cream, milk, parsley, salt and pepper. Stuff shells with potato mixture and sprinkle with remaining cheese. Bake at 350º for 20 minutes.
