4 Rib eye steaks (1/2 in. thick and 8 oz. each)
1/4 tsp pepper
1/8 tsp salt
2 tbsp finely chopped green onion
1/2 tsp butter, divided
1 tbsp lemon juice
1-1/2 tsp Worcestershire sauce
1 tbsp minced fresh parsley
1 tbsp minced fresh chives
1/2 tsp ground mustard

Sprinkle steaks on both sides with salt and pepper. In a large skillet, cook onion and mustard in 2 tbsp butter for 1 minute. Add steaks; cook for 2 to 5 minutes on each side or until the meat reaches desired temp (for medium rare, a meat thermometer should read 145; medium, 160 and well done 170. Remove steaks to a serving platter and keep warm. In the same skillet, add the lemon juice, Worcestershire sauce and remaining butter, cook and stir for 2 minutes or until thickened. Add parsley and chives. Serve over the steaks.
