6 cups rolled oats (not instant or quick cooking)
2 cups coarsely chopped nuts (pecans, walnuts, sesame seeds, almonds, cashews)
Cinnamon to taste
Dash of salt
1 tsp vanilla (optional)
3/4 cup honey
1 cup each dried fruit (cranberries, apricots or golden raisins)

Preheat oven to 350 º. Combine oats, nuts, cinnamon, salt and honey. Spread onto jelly roll pan or cookie sheet. Bake 30 min (longer if you desire extra-crunchy!), stirring occasionally to evenly brown.
Remove from oven, add dried fruit, mix to combine. Cool in pan until mixture reaches room temperature. Store in sealed container in refrigerator to maintain freshness and crunch.
