1 Granny Smith apple, peeled and cut in 1/4 in slices
2 tsp fresh lemon juice

4 eggs 3/4 c milk
3/4 cup flour 1 tbsp sugar
1/4 tsp salt

1/4 c packed brown sugar
1 1/4 tsp cinnamon

4 tbsp butter

Whisk eggs and milk. Add flour, 1 tbsp sugar and salt. Whisk until almost smooth
Mix brown sugar, cinnamon and remaining 1/4 cup sugar in small bowl.
Melt 1 tbsp butter in each of 2 6inch ovenproof nonstick skillets over med heat. Pour half of batter in each skillet. arrange half of apple slices evenly over batter in each skillet. Put in oven and bake until pancakes are set around edges, but still wet in center, about 8 minutes. Remove from oven, sprinkle half of brown sugar mix over each pancake. Dot each with 1 tbsp butter. Using spatula, carefully turn pancakes over. Return to oven and bake until pancakes rise, sugar misture melts to sauce consistency and top of pancakes is golden. About 6 minutes. Invert on plates and serve warm
