2 scallions
2 slices ginger
1 tbsp. sherry
1 tbsp. soy

Sauce One
4 tbsp.soy
2 tbsp. honey
1 clove garlic, crushed
1/2 tsp. salt
1/4 tsp. msg

Sauce Two
1 tbsp. oil in pan
4 slices fine chopped ginger
2 scallions, chopped
1/2 tsp. or 5 cloves
1/4 tsp.When cool, bring to boil again, turn off, let cool in broth. red pepper crush pepper and cloves together

1 head of lettuce

Directions:
Directions:
Bring water to boil. Add whole chicken, bring to boil, turn off. [Chinese chickens are small - if meat is too pink in places, microwave as briefly as possible] Add scallions ginger, sherry and soy and heat till warm. When cool, bring to boil again, turn off, let cool in broth.

Mix ingredients for Sauce One and set aside.

For Sauce Two, heat oil in pan and heat all ingredients until warm.
Add Sauce One to Sauce Two.

Remove meat from chicken, shred lettuce, place chicken on top, drizzle sauce over all, serve.
