1 qt. whole milk
1 large handful of dried sea moss, refreshed in a bowl of cold water, enough to cover
1 c. sugar
3 tsp. vanilla

(can substitute 2 squares of semi-sweet chocolate for the vanilla for a different flavor)

Directions:
In a double boiler heat one quart of whole milk. When the milk is hot but not boiling, add the refreshed sea moss. Do not squeeze out any of the water. Stir the moss and milk until nearly all of the moss has dissolved into the milk. Add one cup of sugar and 3 teaspoons of vanilla for flavoring, then strain into a bowl, setting aside to cool. You can substitute two squares of semi-sweet chocolate for an alternative flavor. Chill and serve with cream if desired.
