4 good sized chicken breasts
1/2 c. flour
2 sliced up onions
1/4 c. olive oil
5 slices of prosciutto chopped up (Bacon or panchetta work too)
8 ounces of mushrooms (use crimini, oyster, and white)
1/2 c. marsala wine
1/2 c. chicken broth
2 tbsp. butter
1/4 c. creme or half and half
parsley

Directions:
Directions:
1) pound your chicken breast flat with a meat mallet.

2) dredge chicken in the flour season with salt and pepper, just lightly coat the chicken in flour

3) heat up a skillet with the olive oil, when hot brown the chicken on both sides (about 4 min a side). When they are done take them out and set them on the side.

4) crisp up the prosciutto, when that is done add the butter and the onions, cook the onions till they are almost carmelized.

5) when the onions are ready add the mushrooms, cook them till they get soft, when those are done add the wine, chicken stock, and creme and let the alcohol cook off for about 5 min

6) add the chicken! let it simmer for about 5 min, then serve and garnish parsley if you want to be fancy =)

Goes great with risotto or a nice tomato salad.
