2 c potatoes, cubed
1/2 c grated carrots
1/2 c chopped celery
1/4 c chopped onion.

White Sauce:

1/4 c cornstarch
1/4 c margarine
2 c milk
1/2 c chopped ham
8 oz. cubed Velveeta cheese
1/2 c water
1 tsp parsley flakes
salt
pepper
Directions:
Directions:
Cook potatoes, carrots, celery and onion and 1 can of chicken broth (or 2 c water and 2 chicken bouillon cubes) in a pot until tender.

Cook cornstarch, margarine, milk together until thickened, add to vegetables and add ham, cheese, parsley, salt and pepper.
