5 c diced potatoes
1-1/2 c diced carrots
1-1/2 c diced celery
1 cup diced onions
1 c evaporated milk
2 c cooked and diced ham or bacon
2 tsp salt
1 c milk
2 tbsp parsley
water
2 c velveeta cheese (1/2 large brick)
1/4 c butter

Directions:
Directions:
Combine potatoes, carrots, celery and onions in a large pot. Add salt and enough water to cover the vegetables. Boil about 20 minutes or until the vegetables are soft. Slightly mash some (but not all) of the potatoes. Take the mixture off of the stove and add the remaining ingredients, Return to the stove and heat until bubbly.
