3 eggs
2/3 c. canned pumpkin
1/2 tsp. baking powder
1/2 tsp. cinnamon
3/4 c. flour
1 cup sugar
1/2 c. chopped pecans (opt.)
1/2 c. powdered sugar
4 T. butter..soften
8 oz. cream cheese...soften
3/4 tsp. vanilla
1 c. powdered sugar

Preheat over to 375º. Grease a 9x13 jellyroll pan and line with waxed paper. Mix together eggs, pumpkin, sugar, baking powder, cinnamon, flour. Pour batter into prepared pan. Sprinkle with nuts, if you want. Bake for 15 min. Place a linen towel on table and sprinkle with 1/2 c. powdered sugar. Turn cake onto towel and roll up immediately and let cool completely (several hours). Mix butter, cream cheese, vanilla, and 1 c. powdered sugar until creamy and smooth. Gently unroll cooled cake and spread filling on top ( it may crack, it happens to me often, I just use the filling as a 'glue' to put it back together), roll it back up and chill till serving
