2 Tbsp cooking oil
2 beaten eggs
1/2 c diced fully cooked ham
1/4 c thinly sliced green onion
Dash ground red pepper
3 c unsalted cooked rice, chilled
2 Tbsp soy sauce

Directions:
Directions:
In a large skillet: heat 1 tbsp of oil over medium heat. Add eggs and cook without stirring until set. Loosen eggs and invert skillet over cutting board to remove; cut into strips.

In the skillet heat remaining oil over medium heat. Cook ham, onion and red pepper for 3 minutes.

Stir in cooked rice and egg strips; sprinkle with soy sauce and 1 tbsp water. Cook for 3-5 minutes or till heated through, tossing gently to coat with soy sauce.

Can also stir in 1/2 c frozen peas, thawed or 2 c chopped chinese cabbage. May add 1/2 c chopped mushrooms
