2 cups flour
1-1/2 cups sugar
1 cup oil
1/2 cup orange juice
1/4 cup cocoa
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp vanilla
4 eggs
2 cups shredded carrots
1 cup coconut
Directions:
Directions:
In large bowl, beat first 10 ingredients on low speed just unitl combined. Increase speed to high; beat 2 minutes. Stir in carrots and coconut. Bake in greased and floured 10-inch Bundt pan at 350ºF for 50-55 minutes, or until toothpick comes out clean. Cool cake for 10 minutes before removing from pan.
