1 bag frozen, shredded has browns
3 C. shredded sharp cheddar cheese
1 C shredded Monterey Jack Cheese
1 C fully cooked ham (can use bacon, sausage, or veggies)
1 Scallion, thinly sliced (optional)
7 eggs
1 C milk
1/2 t. salt
1/2 t. dry mustard
1/4 t. pepper

Directions:
Directions:
Brown hash browns, place in a greased 13x9" baking dish. Sprinkle with cheeses, meat (veggies, etc.)

In a bowl, beat eggs, milk, salt, mustard, and pepper until well combined. Pour over has browns.

Cover and bake at 350º for 1 hour. Uncover and cook for 15 minutes or longer, until edges are golden brown and knife inserted near center comes out clean.
