15 oz can Garbanzo Beans drained and rinsed
1/2 of a 8.5 oz jar of oil packed Sun-dried tomatoes
1/4 C Red Onion chopped
1/4 C Green Pepper diced
2 Cloves Garlic finely minced
1T Olive Oil (use more if needed)
1/4 Fresh Parsley minced
2 T Lemon Juice
1/2 tsp Salt

Directions:
Directions:
Combine all ingredients, including 1/2 of the oil from the jar of sun-dried tomatoes, in a bowl or Tupperware. Cover and refrigerate overnight. Serve at room temperature.
