Ingredients: MAPLE CREAM SAUCE: 1/2 cup maple syrup 1/4 cup packed brown sugar 1 cup whipping cream 1 tbsp. butter, at room temperature
PUDDING: 4 egg yolks 4 eggs 4 cups cubed fresh white bread - crusts removed 4 cups blueberries 1 cup white chocolate chips 3/4 cup whipping cream 1/2 cup sugar Grated zest of 2 lemons

Directions:MAPLE CREAM SAUCE: In a medium saucepan, stir together maple syrup and sugar; heat until sugar dissolves (2-3 mins.). Slowly stir in cream; cook over medium-high heat until slightly thick (5-7 mins.). Remove from heat; stir in butter.
PUDDING: Preheat oven to 350ºF. Butter a 12-inch or 2.5L oval glass baking dish. In a large bowl whisk together eggs, cream and egg yolks; stir in remaining ingredients. Let stand at room temperature for 15 mins. Pour into prepared pan and bake 50-55 mins. or until golden and knife inserted comes out clean. Serve with Maple Cream sauce and a scoop of vanilla ice cream/frozen yogurt. |
