2 cans chicken broth
1 c. quick cooking grits
1/2 c. chopped onions
1/2 c. chopped bell pepper
1 c. shredded cheddar cheesse
1 c. shredded pepperjack cheese
1 can rotel, drained
1 lb. small frozen shrimp, cooked, peeled & deveined & thawed

Directions:
Boil 4 cups of chicken broth, add 1 c. quick cook grits. Simmer for 20 min. sautee chopped onions and bell peppers in 2 tbsp butter. When the grits are done, add remaining ingredients> Mix well and bake at 350º for 40 minutes.

This is soooo good, but I use the MILD Rotel, otherwise it may be too hot.
