1 box Jiffy Cake mix (white or yellow)
1 (3 oz.) box instant vanilla pudding mix
1/3 c. oil
½ c. water
2 eggs
½ c. sugar
1 tsp. cinnamon
1 tsp. cocoa

Directions:
Directions:
Beat together the cake mix, pudding mix, oil, water and eggs. Pour into a greased 9x9x2 inch dish. On top, spread the sugar, cinnamon and cocoa mixture. Swirl the sugar mixture, cutting it into the cake batter with a knife. Bake 30 minutes at 350º.

This is Curtis’ favorite coffee cake. I make it at least once a week, using Egg Beaters instead of eggs. I also use canola oil in place of vegetable oil and cut back to about ½ tsp. of cocoa.
