1 onion chopped
1 small bell pepper chopped
3 toes garlic chopped
3/4 cup flour
3/4 cup oil
6 to 8 large potatoes peeled and cubed
1 can corned beef
seasoning to taste (Tony's)

Directions:
Directions:
Make a light brown roux with the flour and oil. Add the chopped seasonings and simmer until wilted. Add one can of corned beef and cook for 2 to 3 minutes on medium fire. Add approx. 8 to 10 cups of water. Mix well and add peeled, cubed potatoes. Cook until thick and potatoes are soft. Serve over rice.

My mom (Aunt Mice) made this dish for her family and as children and as adults we would request it often. I always requested it on my birthday! It is a simple but very satisfying dish.
