12 oz Ground sausage, such as Jimmy Dean original flavor
1 apple, peeled and diced
1/2 sweet vidalia onion
1 cup ricotta cheese
1/4 cup crumbled herb & feta cheese
1 half 15" refrigerator pie crusts
3 T. butter
1 T. sugar
1 glove garlic, minced
2 cups shredded Italian cheese blend

Preheat oven 450.

Unfold pie crust into 9-inch pie plate. Poke holes into the pie crust so it does not form bubbles. Bake according to package directions, eliminating any bubbles that may form.

Heat butter on medium heat in a large skillet and cook apples, onion and sugar until tender (about 5 minutes). Transfer mixture into a medium bowl.

In the same skillet, brown the sausage and garlic. Drain grease and spoon into baked pie crust. Top with apple and onion mixture.

Combine cheeses and eggs and spoon evenly over apple and onion mixture.

Bake 35-40 minutes or until a knife inserted near the center comes out clean. Let 10 minutes on a wire rack before serving.
