1 Ham hock
1 Onion
2 Bay leaves
Water to cover beans

Directions:
Directions:
Soak beans over night and drain. Add the ingredients and bring to a boil. Reduce to simmer until beans are tender. Might need to add some water as the beans cook. Salt and pepper to your own taste.
Use your favorite cornbread recipe. To serve, cut a piece of cornbread in half and cover with beans. Garnish with some fresh diced onions and black pepper

This was a staple for the Hands at least 2-3 times a month. I remember going to Othello to the bean sorting shed and picking up white beans and some pinto. Some how Mom and Dad seemed to know how to save a penny. This is one of my favorite meals. When in the service I would get questioned, "How do you know about this dish?" I would be asked if I was from the South.
