1 large head of Nappa/Chinese Cabbage (Chinese Cabbage is most tender but any cabbage that’s on sale is good.)
1/2 head of red cabbage
1 bunch of green onions

1/2 c Canola oil
1/4 c. wine vinegar
about 4 or 5 packets of a sugar substitute.
1/2 T. Light soy sauce

2 packages of Ramen noodles - do not use the seasoning packets
½ c. sesame seeds
1 package (4 oz.) sliced almonds
3 T. canola oil

Directions:

Chop or shred the cabbage and put in a large bowl with chopped onions. Mix well the next four ingredients and pour the mixture over the cabbage. Toss to coat. This can be made a couple of days ahead.

While the noodles are in the package, smash them into small bits. Brown the noodles, sesame seeds and almonds in a fry pan with the oil. Stir constantly until brown. (One can brown them in the broiler - spray them with cooking oil and stir them as they brown.) Just before serving, pour this over the cabbage and mix

My sister-in-law gave me a version of a “Chinese Cabbage Salad." I’ve changed it to lower the calories. I found my changes make the leftovers moist and tasty for days. . Rave reviews everywhere I’ve served it!
