2 potatoes
2 large carrots
2 stalks celery
1 onion
1 can green chiles
1/4 cup cilantro
1/4-1/2 cup chunky salsa
1 tsp. cumin
A few red pepper flakes
1 cube powdered beef bullion
Flour tortillas

Directions:
Directions:
Chop potatoes, carrots, celery, and onion into 3/8 inch cubes. In a fry pan with a lid, add veggies and rest of ingredients, except tortillas. Place lid on and cook on low – medium heat until veggies are just tender but not mushy. Heat flour tortillas and fill with mixture. Top with shredded cheese, sour cream, and avocado or guacamole sauce and roll up.
