1 eggplant
1/2 lb. bacon, fried crisp and crumbled
1 onion, chopped
2 eggs
1/2 cup bread crumbs
1/4 cup Parmesan cheese

Directions:
Directions:
Pare and dice eggplant. Parboil until tender. Drain well. Salt and pepper to taste. In a bowl, mix all ingredients and place in a 9 inch square pan. Sprinkle with a few more bread crumbs and bake 30-35 minutes at 350º.

This is a very good and unusual eggplant dish. For those who don’t like eggplant, I tell them it is a vegetable dish. There are usually no leftovers.
