1 Cup Whole Grain Bulghur Wheat
3 to 4 fresh tomatoes
1 English (hothouse)cucumber
2 bunches scallion tops
Fresh parsley, to taste
1/3 c. vegetable oil
2/3 c. fresh lemon juice
salt/pepper

Directions:
Directions:
Add two cups water to wheat and let sit while preparing other ingredients.

Chop tomatoes, cucumber and scallions and parsley finely add with oil and lemon salt/pepper mixture to wheat that has been absorbing water. Let sit in fridge at least four hours before serving.

Can be an appetizer and is great served with tortilla chips.
Expand by keeping the wheat to water ratio at 1 to 2. Also,
I usually use more lemon because I can't get enough of it.
