4-5 potatoes peeled and cubed
2 leeks, white parts only chopped
10 cloves of garlic
2 quarts of chicken broth or water
12 oz mushrooms- thinly sliced
1 c. non dairy creamer, soy milk or milk
salt, pepper

Directions:
Directions:
1. Saute potatoes, leeks and garlic for 10 min
2. Add broth and bring to a boil
3. Reduce the heat adn simmer for an hour
4. Saute mushrooms in a separate pan and set aside
5. Grind soup, return to pot and add mushrooms and milk
6. Season with salt and pepper
