Ingredients:  
Ingredients:  
6 boneless chicken breast cutlets, about 3 lb.
2 cans condensed chicken broth -10.5 oz each
2 1/2 c. water

For Sauce
1 c. walnuts
2 c. baby spinach leaves
3/4 c. basil leaves
4 cloves garlic, peeled and halved
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. olive oil

Directions:
Directions:
1. Rinse cutlets and pat dry
2. Boil chicken broth and water, add chicken
3. Reduce heat and simmer 15 min. Turn off heat and allow chicken to cook another 15 min.
4. Remove chicken from broth, cover and chill for 1 hour
5. In food processor blend sauce ingredients except oil
6. Pour oil while machine is running
7. Slice cutlets thinly and pour pesto over
