Spinach-Stuffed Manicotti Recipe

1 (8-oz.) package Manicotti,
1 lb. lean ground beef
1/2 c. chopped onion
2 cloves garlic, chopped
1 jar of marinara sauce
2 tsp. oregano leaves
3 c. shredded Mozzarella cheese
1 (15-oz.or 16-oz.) container Ricotta cheese
1 (10 oz.) package frozen chopped spinach, thawed and well drained
2 eggs
1/2 c. grated Parmesan cheese

Cook the manicotti as the package directs; drain. Preheat oven to 350º. In a large saucepan, over medium heat, brown meat; pour off fat. Add onion and garlic; cook and stir until tender. Stir in marinara sauce and oregano. Simmer 15 minutes.

In a bowl combine 2 c. Mozzarella cheese, Ricotta cheese, spinach, eggs and Parmesan cheese; mix well. Stuff into manicotti. Arrange in a greased 13 x 9 baking dish. Spoon sauce evenly over manicotti.

Cover and bake 30 minutes or until hot and bubbly. Top with remaining 1 c. of Mozzarella cheese. Bake 15 minutes longer.

Doug makes this, but it takes him quite a while to do it so we don't get it very often. Any spagetti sauce can be used in place of the marinara sauce. He says if you have a large family you need to make 2. It is one of our family favorites!
