1 yellow, red or orange pepper, cubed
3/4 pound zucchini, cut into thick diagonal slices (about 3)
salt and pepper to taste
1 red onion, cut into 8 wedges
1-2 tablespoons olive oil
1 cup whole wheat orzo
1 cup fresh basil
2 medium tomatoes, cut into wedges
1-2 tablespoons balsamic vinegar
4 ounces goat cheese

Preheat oven to 425º. Toss the peppers zucchini and onion with the olive oil in a large bowl. Add the salt and pepper. Roast on a baking sheet until tender and starting to brown (about 40 minutes) tossing halfway through. While the veggies are roasting, boil the orzo until just cooked, about 7-9 minutes. Drain. Toss the orzo with the roasted veggies, tomatoes, basil and goat cheese. Drizzle with vinegar.
