4 Very Large #1 Potatoes or equivalent
Oil for Frying Potatoes
salt and pepper
3/4 lbs Ground Sausage (Jimmy Dean or other original)
8 eggs
Shredded Sharp Cheddar Cheese
2 Packages of Fresh Flour Tortillas (not the refrigerated kind)
Salsa as a topping (Prefer medium Pace Picante)

Directions:
Using a cutting board, dice potatoes into small chunks. Put oil into a very large fry pan, preferably non stick. Heat on medium heat, add potatoes. Adding as much oil as needed to cook the potatoes. When potatoes are almost cooked, add sausage onto potatoes. Mix in and cook sausage thoroughly. When sausage is cooked add eggs into the mix. Cook and keep stirring until thoroughly mixed and eggs are cooked. When eggs are cooked, the mix is ready. Take off the stove and serve directly from fry pan.

To serve, heat tortillas in microwave together, or even individually if desired.

Spoon mix into tortilla add cheese and salsa to desired amount.
