1 1/2 cups cornmeal
4 tablespoons flour
1 teaspoon baking soda
1 teaspoon salt
1 cup cracklings(pork rinds or crisp, crumbled bacon)
1 egg
1 1/2 cups buttermilk
1 tablespoon bacon fat, melted(lard)

Directions:
Directions:
Preheat oven to 450°F.

Sift together flour,baking soda,salt, and stir in cracklings.

Beat egg in the buttermilk and add to the dry mixture. Heat melted fat in hot skillet. Pour batter into hot skillet.Put the hot skillet in the oven.

Bake in preheated 450°F oven until brown.
