6 packages - Pioneer Sweet Yellow Corn Muffin Mix
1 package - 8 oz. Mexican 4 Cheese Blend
1 - Large Onion - chopped
3 - Jalapeno Peppers - chopped
1 - Bell Pepper - chopped
1 - 1 lb. Roll of Pork Sausage (Jimmy Dean, Owens, etc.) - finely chopped

*Prepare Corn Mufffin mix according to package directions
* Grease (Pam) 2 - 9" cast iron skillets bottoms with a light dusting of the corn muffin mix, and sprinkle a handful of the cheese over the muffin mix, and set aside.
* Fry the pork sausage in a non-stick pan until it crumbles and darkens, and saute' onions and peppers lightly with cooked sausage.
*Mix all remaining ingredients in bowl and pour on top of corn mix and cheese in skillet.
*Bake in 400º oven for 45 minutes.
*Flip over onto plate and serve.

**Caution be sure to loosen bottom of cornbread from skillet with a plastic spatula before fliping over. Mine has separated before.
** If made with deer sausage you may have to add a little olive oil.
