1 whole chicken (about 3 1/2 lbs)
3 T spice rub
1 12 oz. can of beer
Spice Rub
2 T. ground cumin
2 T. curry powder
2 T. chili powder
1 T. sugar
1 T. black ground pepper
1 T. garlic salt

Directions:
Rub whole chicken with your favorite rub all over generously. For best flavor, be sure to rub the mixture on the inside cavity of the bird, under the skin and the outside too.
Open can of beer and drink (or pour out) 1/4 Cup. With can opener make two more hole in the top of the can. Insert the can into the cavity of the chicken so that the drumsticks reach the bottom of the can. The should be "standing" upright on the tripod formed by the can and two legs.
Using the indirect method of grilling, place the chicken over a drip pan with lighted, medium-hot charcoals on either side. (or as I do with my three burner gas grill, turn off the middle burner and leave the outside burners on medium, placing the bird in the middle) Cover the grill and roast for about an hour, rotating half way through if necessary for even browning. The cooking time will vary depending on the size of the bird and the heat of the grill. begin checking for doneness after 45 minutes. The temperature should be 160-165 degrees.
Remove chicken from the grill (keeping upright with the can inside) and allow to rest for 15 minutes.
Discard can, crave chicken and enjoy!

This is also called Dancing or Drunken Chicken because sometimes the chicken legs bounce up and down like it's dancing! The beer stems the chicken and keeps it very moist and tender.
