1 and 1/2 to 2 pounds pork tenderloin
1/4 cup soy sauce
1/4 cup apple cider vinegar
2 tablespoons dark brown sugar
2 tablespoons honey
2/3 cup apricot preserves
1 and 1/2 teaspoons dijon mustard

Marinate pork in soy sauce, vinegar, sugar and honey overnight. Drain marinade and reserve. Place pork in a shallow dish, spoon 1/4 cup marinade over it and bake 30-40 minutes at 350º, basting every 10 minutes. Remove from oven and drain marinade. Combine preserves and mustard and spoon over pork. Bake for an additional 10 minutes or until meat reaches 155º.

This tenderloin is sooo tasty. The apricot glaze gives it a sweetness that balances well with the savory flavor of the pork. I love to serve it with wild rice and a fresh green salad. This dish is perfect for special occasions or a simple night at home. I usually keep all of the ingredients in my pantry and just pick up the tenderloin from the store.
