Instant mashed potatoes
1 egg
1/3 c chopped celery
1 T. Chopped parsley
1 T chopped onion
4 slices bread, cubed (stale is best)
milk as needed
1 T butter

Directions:
Directions:
Mix instant potatoes according to directions on the box. For a 1 qt casserole use recipe for 6 servings.
To the potatoes add the egg, celery, parsley, onion, and bread cubes. If it is too stiff, add milk in small quantities to make the right consistency. Spoon into buttered baking dish and top with slivers of butter. Bake at 350º for 25'.

Grandmom Mills always sauteed the celery, parsley and onion before adding them to the potatoes. I don't do that and think it tastes just as good. You can make this with homemade mashed potatoes, but the instant potatoes were her secret ingredient and they work well!
