Ingredients: 4 cups flour, not bread flour, I prefer unbleached 2 tablespoons potato flour, or 1/4 cup dried potato flakes 1/4 cup Baker's Special Dry Milk or nonfat dry milk 2 teaspoons salt 2 teaspoons sugar 2 teaspoons instant yeast 1 1/2 cups water 3 tbsp. olive oil Topping: 1 egg white beaten with 1 tbsp. water raw sesame seeds, optional

Directions:Mix all ingredients together. The water can be room temperature. Knead for several minutes and place in a greased bowl to let double in size... about an hour. Punch down and roll out to form two 16" logs. Set these into a greased Italian bread pan to rise another hour. If you want, you can use parchment paper on a cookie sheet or a greased cookie sheet. Just before baking, brush on the topping and sprinkle on the sesame seeds. Bake on 400º till golden brown, about 15 minutes. Notes: Mom loves this recipe. She also owns the bread pans if you are ever visiting and want to make bread for her. I often leave the dry ingredients at her house in a plastic bag in the freezer to add the water and oil later. To make Pepperoni Bread (Donna Bruno Johns), roll out the dough after the first rise, sprinkle on pepperoni and mozzarella cheese, roll it up and let it rise the second time, seam side down.
